Pork Chorizo and Scrambled Eggs

Chorizo and eggs are an iconic duo in Mexican cooking. The flavorful spices from our pork chorizo make this classic dish even more delicious!
6 Large Eggs
1/2 tsp kosher salt
1/8 tsp ground black pepper
2 Tbsp white onion (small dices)
2 cloves og crushed garlic
6 flour or corn tortillas, warmed (6-inch)
Fresh cilantro, chopped
In a small bowl; whisk together eggs, salt, and pepper until all ingredients are fully incorporated. Set aside until needed.
Preheat a nonstick skillet for 2 minutes over medium heat. Cook Chorizo for 3 to 5 minutes, crumbling with a spoon while cooking. Mix in onion and garlic. Continue to cook for an additional 3 minutes. Remove Chorizo from skillet and keep warm until needed.
Pour eggs into the same skillet that the Chorizo was cooked in. As eggs begin to set, gently move spatula across bottom and side of skillet to form soft curds. Gently fold in cooked Chorizo until well combined.
Garnish with cilantro, serve with warm tortillas on the side, and enjoy!
